Mmm- Budget low carb peanut butter cookies!


Okay- so I decided to do the low carb thing to start the new year off healthier and hopefully shed the 10 pounds I've put on since Ryan and I got married. After surfing around on one of my favorite websites, allrecipes.com, I discovered a recipe for flourless peanut butter cookies that could easily be adapted to become low carb. Amazingly, its super inexpensive as well!

1 cup peanut butter (free from CVS a few months ago) :)
1 egg
1/4 cup splenda (If you're not low carbing feel free to sub this for 1/2 cup of sugar)

Mix well, until the dough almost becomes 'dry'. Roll into 8 balls, press flat, and bake for 12 minutes being careful not to overbake.

Viola!

Now, I'm sure this would be considered cheating an eensy weensy bit, but I had to do it. Chocolate! If you're going to add this part, which is to die for, here's what I did to keep it both budget and carb friendly:

4 squares of Lindt dark chocolate - free from Wags in December :) (4 squares = 20 g Carbs)
1/4 cup half and half

Microwave the chocolate until it just starts to melt, stir in the half and half and microwave for about 20 more seconds. Stir until smooth. Freeze for 5 minutes. Once the cookies cool divide the chocolate mixture eavenly among the cookies, and enjoy!

(Each cookie contains approximately 13 carbs when using the splenda and chocolate topping.)

Looks ubber yummy! I need to do something to lose weight. Looking at the cookies though is making me hunger!
